A deep-sea flatfish that lives in waters down to more than 1,000m, generally over sandier and muddy seabeds, witch has a similar appearance to Dover sole – especially when trimmed and skinned – and is from the same family as lemon sole and plaice. In continental Europe it is often sold on wet fish counters, but is less popular in the UK, where it is sometimes referred to as Torbay sole, in a bid to broaden its appeal. Well worth trying if you see it – and can be a real bargain too.
