Posh Sardines on Toast

Cooking with fish doesn't have to be complicated! Keep some tinned British sardines in your cupboard for a quick and delicious snack!

1. Place 1 tbsp of the oil from the canned sardines in a non-stick frying pan. Heat gently and add the garlic, chilli and herbs. Fry for a few minutes.
2. Drain the sardines fully and add the fish to the pan. Season with pepper and heat through.
3. Serve the sardine and herb mix on the sourdough toast with a lemon wedge for squeezing over.

Serves 1


120g can sardines in olive oil
1 clove garlic, roughly chopped
1 small red or green chilli, deseeded and roughly chopped
Handful fresh herbs, eg parsley, chopped
2 slices sourdough bread, toasted
Lemon wedge, to serve
Black pepper
